Homemade Dragon Fruit Smoothie Bowl

My Homemade Dragon Delight Bowl is one of my new healthy obsessions. Why? Because who can resist the color purple? It has always been my favorite color, but more than that Dragon Fruit is actually a superfood!

Dragon Fruit aka Pitaya has amazing benefits. Here are 10 possible benefits:

1. Bones & Teeth - Calcium & phosphorous work together to improve bone mass

2. Nervous System - High in B vitamins which aid in forming nerve cells

3. Eye Support - Vitamin A to help prevent night blindness

4. Glowing Skin - Antioxidants and essential fatty acids help skin look younger

5. Anti-inflammatory - Provides alkalinity to help reduce inflammation

6. Digestion & Metabolism - High fiber aids in digestion health

7. Cardiovascular - Helps lower cholesterol & reduce high blood pressure

8. Anti-aging - Antioxidants help to rid free radicals which damage our bodies

9. Immunity - High vitamin & mineral content improves immunity

10. Cancer prevention - Phytoalbumins is an antioxidant that blocks tumor cell growth and rids the body of toxic heavy metals

My easy recipe:

Ingredients:

1/2 Cup frozen dragon fruit

1/2 Cup frozen Bananas

2 Tblsp coconut milk

handful of fresh fruit of your choice

handful shredded unsweetened coconut

handful of chopped nuts

Directions:

Place frozen dragon fruit, bananas, & coconut milk in a high powered blender. I used a mini food processor. Blend until you reach a smooth creamy texture. It took me a good 3 minutes & I had to scrape down the sides a couple times. Pour this mixture into a bowl & top with fresh fruit (today I choose kiwi, strawberry, & blueberry), chopped nuts (I choose almond slivers), & unsweetened coconut shreds.
